Multigrain Banana Bread





One always tends to have overripe banana at home and more often than not they tend to go in the bin. Make this banana bread to use them, you will have a cake for evening snack that will make the child happy while the wholesome food banana goes into the quota of your kid’s daily fruit intake

Makes: one medium size loaf
Serves : 4 – 6

Ingredients:
  • ½ cup multigrain atta
  • ½ cup all purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • ¼ cup oil or melted butter
  • 1/3 cup of brown sugar
  • ¼ cup curd
  • 1 tsp vanilla essence
  • 3 over ripe bananas mashed

Method:
  1. Pre-heat oven to 180C and grease a medium sized loaf pan with butter. Set aside.
  2. Sift together atta, all purpose flour, salt and baking powder and set aside.
  3. In the bowl whip oil, brown sugar and curd together for 2-3 minutes till its all blended and smooth.
  4. Add vanilla and mix.
  5. Add the mashed bananas and mix for another minute.
  6. Now in three batches add the flour mixture and fold.
  7. Pour the batter in the prepared pan and bake for 25-30 minutes till a toothpick comes out clean.
  8. Wait for it to cool completely before removing the bread from the pan and slicing.
